Last Thanksgiving, if asked what I was most thankful for, I would have said food, to be specific, gluten-free food. While food is an essential part of Thanksgiving for almost every American, it really matters to me. Food represents family and my grandmother’s attempts at making gluten-free cookies, inventiveness and my mom’s cornbread made with applesauce, but most of all, food represents tolerance. Ironically, food companies weren’t always tolerant of food allergies. Until 2009, gluten was disguised on nutrition labels as “modified food starch” or “maltodextrin.” A fast-food corporation…
